Mini Sloppy Joes

Sloppy joes anyone? Does anyone else remember having these as a staple dinner when you were a kid. I definitely remember and I know I hated them at the time. I was inspired by the food network while watching "The Pioneer Woman", one of my absolute favorite shows to watch. I love cooking tv!
I changed up the recipe to my liking and here it is for you to try.
I love the Hawaiian rolls and always use them for sandwiches, so I got those to make mini sloppy joes and they were perfect!

Ingredients:
1 tablespoon olive oil
1 1/2 pounds ground beef
Salt & pepper to taste
1/2 medium onion
5 cloves of garlic
2 tablespoons of tomato paste
1 cup of beef broth
Ketchup to taste about 3/4 of a cup
1 tablespoon of brown sugar
Shredded cheese
Hawaiian Rolls
Directions:
1. Heat olive oil over medium-high heat. Add the beef and brown 8 to 10 minutes, seasoning with a pinch of salt and pepper. Drain off all but a couple tablespoons of the fat.
2. Add the onion, garlic and tomato paste to the pot. Stir and cook for a minute to combine and cook the tomato paste slightly. Add the stock, ketchup, and brown sugar. Season with another pinch of salt and pepper. Stir to combine. Cover and simmer over medium-low heat for 10 to 12 minutes to deepen the flavor.
3. Taste the meat mixture and adjust seasoning as needed.
4. Shred some cheese and build your sloppy joes. I used Hawaiian rolls since they are super soft and delicious! Enjoy!
